This weekend my roommate, neighbors, and I went "camping". We stayed in an old cabin right on the beach, feasted, and hung around a campfire. It was a lot of fun, and made it feel a little like fall for once. The fire was complete with s'mores, thanks to Rosie, who insisted on stopping at the superette for marsh mellows. Took me back to the good 'ole girl scout days haha. In the morning we woke up to the sunrising over the ocean (we were camping on the east side of the island), and then my neighbor and I got to work on breakfast. She made grits and eggs, and I made banana, roasted macadamia nut pancakes. The pancakes were amazing if I do say so myself. ; )
We spent the rest of the day down at the beach relaxing, before I stopped by my aunts house to borrow her car to pick up Neil from the airport on Tuesday!!!!!!!!!! I forgot how much I love it up on the North Shore. It is like a different island compared to the south shore. I need to make it a point to make it up there more often. This is for sure.
Thanksgiving is almost here. Still haven't decided what I'm making. Yikes. I should probably get on that. Hmmmmm ....

Katie, You sound like you are having sooo much fun, hard work too, but alot of fun. You know you will be sorely missed TG as always but you are on an adventure that won't last forever. Enjoy!!! Try the fresh cranberry "stuff" . I dont know what to call it. but easy. 1 bag fresh cranberries, 1 orange cut up. 3/4 cup sugar, 1 cup pecans.......in a food processor..pulse it so it doesn't become slush....chop up with a good knife if you dont have processor...we love you and miss you Happy Thanksgiving Katie! ReplyDeleteHey Katie, having fun finding easy/affordable recipes for ya......here's a good one people at work really liked....Cheese ring with strawberry preserves........heat oven 350 , toast 1 cup chopped pecans 8-10min in shallow pan.
ReplyDeleteStir together 3/4 cup mayo, 1/2 tsp hot sauce, 1 garlic clove minced, stir in pecans ( save a handful to sprinkle on top) and 2- 8 oz blocks grated sharp cheddar cheese, spoon into plastic wrap lined ring mold with a 2 1/2 " center cover and chill 2 hours, turn cheese mold onto platter and fill center ring with strawberry preserves and sprinkle some chopped/toasted pecans on top serve with crackers......pretty simple, just my kind of food luv ya, Linda
